Pecorino Sardo Dolce DOP is a young, semi-soft sheep's milk cheese made by Fratelli Pinna in Sardinia. The milk comes from local farms taken from pasture fed sheep in the north-western part of Sardinia. Aged for 30-45 days, this traditional Italian DOP cheese is ivory in color and has a lovely, delicate sweetness. Sardinians serve Santa Teresa with Pane Carasau, a thin Sardinian cracker. This mild pecorino makes a great addition to any cheese and antipasto plate. It melts well too!
